DescriptionWe collaborate with a third-generation family-run undertaking devoted to blood-sausage morcilla. Established in 1979 in Burgos – home to the savoury morcilla, this family has become ever since an expert in the crafting of this delicacy. Morcilla is a meat-less sausage, the filling being a mixture of coagulated pork's blood, premium rice, lard, paprika, salt and 'horcal' onion. These ingredients are first knead and subsequently stuffed into natural casings, preferably bovine small intestines. And then it is cooked.
